- Puree the lime juice, vinegar, chili powder, cumin, salt, pepper, pineapple, red onion, and chipotle peppers in a blender. Stir in the beer.
- In a 5- or 6-quart slow cooker, combine the pork and the pineapple mixture. Cook on low for 6-8 hours, or until the pork is very tender. Stir to break up the pork.
- Stir the cilantro into the mango salsa.
- Using a slotted spoon, serve the pork mixture in the warmed tortillas. Add the salsa and your desired toppings.
