Ingredients
  

For the Steak
  • 1 lb sirloin steak
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp garlic salt
  • 1/2 tsp black pepper
  • 1 Tbsp vegetable oil
  • 1 lime, halved
For the Tortas
  • 6 hoagie rolls or bolillo or telera rolls, split open
  • 1 (15-ounce) can refried beans warmed
  • 1/4 cup mayonnaise
  • 1 1/2 cups shredded montery jack cheese about 6 ounces
  • 2 vine-ripened tomatoes, thinly sliced
  • 1 1/2 cups shredded iceberg lettuce
Optional for Serving
  • sliced avocado
  • pickled or raw red onions
  • pickled jalapeños
  • hot sauce

Equipment

  • Knife
  • Cutting board
  • Grill pan or skillet

Method
 

  1. Season the sirloin steak with chili powder, cumin, garlic salt, and black pepper. Rub the seasonings into the steak.
  2. Heat vegetable oil in a grill pan or skillet over medium-high heat. Cook the steak for 3-5 minutes per side for medium-rare, or to your desired doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.
  3. While the steak rests, toast the hoagie rolls if desired. Spread refried beans on the bottom half of each roll.
  4. Spread mayonnaise on the top half of each roll. Layer the sliced steak, Monterey Jack cheese, sliced tomatoes, and shredded lettuce onto the refried bean-covered bottom halves.
  5. Top with the mayonnaise-spread top halves of the rolls. Serve immediately with optional toppings like avocado, red onions, jalapeños, and hot sauce.
