- Pat the shrimp dry with paper towels. This helps the coating stick.
- In a shallow bowl, whisk the eggs. In another shallow bowl, combine the shredded coconut, almond flour, parmesan cheese, paprika, garlic powder, salt, and pepper. Mix well.
- Dip each shrimp first into the whisked eggs, letting any excess drip off. Then, dredge the shrimp in the coconut mixture, pressing gently to ensure it's fully coated.
- Arrange the coated shrimp in a single layer in your air fryer basket. You may need to work in batches to avoid overcrowding.
- Air fry at 380°F (190°C) for 8-12 minutes, flipping halfway through, until the shrimp is pink, cooked through, and the coating is golden brown and crispy.
- Let the shrimp rest for a few minutes before serving. Serve hot with your favorite dipping sauce.
