Ingredients
  

For the Oatmeal
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk dairy or non-dairy
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apple

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, maple syrup, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced apple.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 30-35 minutes, or until the oatmeal is set and golden brown.
  8. Let it cool slightly before serving.

Notes

You can serve this baked oatmeal with additional maple syrup, fresh fruit, or a dollop of yogurt.
