Banana Oat Pancakes

Ingredients
  

Pancakes
  • 1 cup rolled oats ground into flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup milk or non-dairy alternative
  • 2 tbsp melted butter or oil

Method
 

  1. In a large bowl, whisk together the ground oats, baking powder, cinnamon, and salt.
  2. In a separate bowl, mash the bananas and whisk in the eggs, milk, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve warm with your favorite toppings.

Notes

You can add a touch of maple syrup or honey to the batter for extra sweetness if desired. These pancakes are also delicious with fresh fruit, yogurt, or a sprinkle of nuts.
