- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the chicken pieces with 1/2 cup of BBQ sauce until evenly coated.
- Spread the coated chicken in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, or until the chicken is cooked through and slightly caramelized.
- Assemble the bowls: Divide the cooked rice among four bowls. Top with the BBQ chicken, black beans, and corn.
- Sprinkle with shredded cheddar cheese and chopped cilantro. Drizzle with extra BBQ sauce if desired.
