BBQ Chicken Bowls

Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce plus more for drizzling
For the Bowls
  • 2 cups cooked rice or quinoa
  • 1 can black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the chicken pieces with 1/2 cup of BBQ sauce until evenly coated.
  3. Spread the coated chicken in a single layer on the prepared baking sheet.
  4. Bake for 15-20 minutes, or until the chicken is cooked through and slightly caramelized.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Top with the BBQ chicken, black beans, and corn.
  6. Sprinkle with shredded cheddar cheese and chopped cilantro. Drizzle with extra BBQ sauce if desired.

Notes

You can customize your bowls with other toppings like avocado, red onion, or a dollop of sour cream.
