Ingredients
  

For the French Toast Bake
  • 8 slices bread stale or day-old, cut into 1-inch cubes
  • 2 cups mixed berries fresh or frozen
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
For Serving (Optional)
  • 1 tablespoon powdered sugar for dusting
  • 1/2 cup maple syrup

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Spread the cubed bread evenly in the prepared baking dish. Scatter the mixed berries over the bread.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined.
  4. Pour the egg mixture evenly over the bread and berries, ensuring all the bread is moistened. Gently press down any pieces that float to the top.
  5. Cover the dish with foil and bake for 25 minutes.
  6. Remove the foil and bake for another 15-20 minutes, or until the French toast is golden brown and set in the center.
  7. Let the bake cool for about 10 minutes before serving. Dust with powdered sugar and serve with maple syrup, if desired.

Notes

You can use any type of bread you prefer, such as challah, brioche, or even a sturdy white bread. If using frozen berries, do not thaw them before adding to the bake.
