For the Green Beans
  • 2 lb green beans ends trimmed
  • 4 Tbsp olive oil divided
  • 1/2 tsp Kosher salt divided
  • 1/4 tsp pepper divided
For the Dressing
  • 1 1/2 Tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 small shallot thinly sliced
  • 2 Tbsp tarragon leaves roughly chopped

Method
 

  1. Heat air fryer to 375°F. In a large bowl, toss green beans with 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  2. Air-fry half of the green beans, tossing halfway through, until just tender, about 8 minutes. Transfer to a second large bowl. Air-fry the remaining green beans, tossing halfway through, for 8 minutes. Add the first batch to the second batch and air-fry until tender and beginning to char, 1 to 2 minutes more.
  3. Meanwhile, in the first large bowl, whisk together the vinegar, Dijon mustard, and 1/4 teaspoon each of salt and pepper. Stir in the shallot and let sit for 5 minutes. While whisking slowly, add the remaining 3 tablespoons oil to incorporate. Add the green beans and tarragon, and toss to combine.
