- Meanwhile, in the first large bowl, whisk together the vinegar, Dijon mustard, and 1/4 teaspoon each of salt and pepper. Stir in the shallot and let sit for 5 minutes. While whisking slowly, add the remaining 3 tablespoons oil to incorporate. Add the green beans and tarragon, and toss to combine.
