Method
- Preheat your oven to 400°F (200°C).
- Place chicken breasts in a baking dish. Drizzle with 2 tablespoons of olive oil, then season with salt and pepper.
- Bake for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While the chicken bakes, prepare the bruschetta topping. In a medium bowl, combine chopped tomatoes, red onion, minced garlic, chopped basil, balsamic glaze, 1 tablespoon of olive oil, salt, and pepper.
- Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping over each chicken breast.
- Serve immediately.
