Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 ounces each
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Bruschetta Topping
  • 2 cups chopped fresh tomatoes about 3 medium tomatoes
  • 1/4 cup chopped red onion
  • 2 cloves garlic minced
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon balsamic glaze
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts in a baking dish. Drizzle with 2 tablespoons of olive oil, then season with salt and pepper.
  3. Bake for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. While the chicken bakes, prepare the bruschetta topping. In a medium bowl, combine chopped tomatoes, red onion, minced garlic, chopped basil, balsamic glaze, 1 tablespoon of olive oil, salt, and pepper.
  5. Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping over each chicken breast.
  6. Serve immediately.
