Ingredients
  

For the Cajun Shrimp
  • 1 pound shrimp raw, peeled, and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
Cajun Spice Blend
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ancho chili powder
For Serving
  • 1 green onion sliced, for garnish
  • 1 lime cut into wedges for squeezing
  • 4 tortillas corn or flour
  • 1 recipe Purple Cilantro Lime Coleslaw

Equipment

  • Large skillet
  • Medium mixing bowl

Method
 

  1. Preheat a large skillet to medium-high heat.
  2. In a medium mixing bowl, stir together the Cajun spice blend ingredients.
  3. Add the raw shrimp to the spices and stir until they are evenly distributed.
  4. Add the butter and olive oil to the hot skillet.
  5. When the butter foams, add the seasoned shrimp in a single layer to the bottom of the pan.
  6. Let the shrimp cook undisturbed for 1-3 minutes until they are mostly cooked through. Flip the shrimp and cook for an additional minute on the second side, just until they are opaque.
  7. Serve the shrimp over the Purple Cilantro Lime Coleslaw on your choice of tortillas. Garnish with sliced green onions and serve with lime wedges for squeezing.

Notes

Shrimp cook quickly; overcooked shrimp can be tough. Raw shrimp are translucent and gray. They turn opaque as they cook. As soon as the back crevice where the vein was removed is opaque, the shrimp is done. You can substitute 1/2 to 1 tablespoon of pre-mixed Cajun seasoning for the homemade blend, but season to taste as some blends can be overly salty.
