Candy Corn Fruit Parfaits

Create a festive and healthy layered treat reminiscent of candy corn, using natural ingredients. This recipe is perfect for Halloween parties or as a seasonal snack.

Ingredients
  

For the Creamy Layer
  • 2 cups cottage cheese 2% fat recommended
  • 1/3 cup pure maple syrup
For the Fruit Layers
  • 3 cups pineapple chopped
  • 2 cans mandarin oranges 10.5 ounce each, drained
For Garnish
  • 1/4 cup candy corns optional

Equipment

  • Food processor
  • Spatula
  • Clear glass jars or bowls

Method
 

  1. Place the cottage cheese in a food processor. Blend for about 30 seconds. Stop and scrape down the sides of the bowl with a spatula. Blend again until completely smooth.
  2. Add the maple syrup to the smooth cottage cheese and pulse until combined.
  3. In clear glass jars or bowls, place 1/2 cup of chopped pineapple in the bottom of each.
  4. Add a layer of drained mandarin oranges on top of the pineapple.
  5. Top the fruit layers with a generous dollop of the whipped cottage cheese mixture.
  6. If using, add a few candy corns for garnish on top.
  7. Chill for at least 10 minutes before serving.

Notes

These parfaits offer a playful nod to a classic Halloween candy, using wholesome ingredients for a guilt-free indulgence. Adjust the sweetness by adding more or less maple syrup to your preference.
