Ingredients

For the Chicken
  • 2 boneless, skinless chicken breasts slice each crosswise to make 4 thin breasts
  • 1 tbsp olive oil
  • to taste salt
  • to taste pepper
For the Chipotle Mayonnaise
  • 1 cup mayonnaise
  • 2 chipotle chili peppers in adobo sauce diced
  • 1/2 tsp lime juice
  • to taste salt
  • to taste pepper
For the Sandwich
  • 1 loaf unsliced Italian or other white bread slice into 8 thick slices (about 1/2 inch)
  • 2 avocados peeled, pitted and sliced
  • 2 cups sharp cheddar cheese grated
  • 8 slices American cheese
  • as needed butter or mayonnaise for grilling

Equipment

  • Glass baking dish
  • Small bowl
  • griddle or skillet

Method

  1. Preheat your oven to 375 degrees F (190 degrees C). Slice each chicken breast crosswise to create thinner cutlets, resulting in 4 thin breasts. Place the chicken in a glass baking dish, season with salt and pepper, and drizzle with olive oil. Roast for 20-25 minutes, or until the internal temperature reaches 165F degrees.
  2. While the chicken bakes, dice the chipotle peppers. In a small bowl, combine the mayonnaise, lime juice, and diced peppers. Season with salt and pepper. Set this chipotle mayonnaise aside.
  3. Heat a griddle or skillet over medium heat. Slice the bread into 8 thick slices, about 1/2 inch thick. Spread one side of each bread slice with softened butter or mayonnaise.
  4. Assemble your sandwiches: Spread the chipotle mayonnaise onto the unbuttered side of the bread slices. Layer with grated cheddar cheese, sliced avocados, the cooked chicken, and two slices of American cheese. Top with another slice of bread.
  5. Grill the sandwiches on the prepared griddle or skillet for 3-4 minutes per side, until the bread is golden brown and the cheese is melted and gooey.

Notes

This sandwich is best enjoyed immediately after grilling to experience the full melty goodness.
