Ingredients
  

Sandwich
  • 2 slices sourdough bread
  • 1 tablespoon olive oil
Sandwich Fillings
  • 1/2 avocado sliced
  • 4 ounces grilled chicken sliced or shredded
  • 1/4 cup Papadew peppers chopped
  • 2 slices gouda cheese
  • 2 tablespoons cilantro chopped
Chipotle Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup chipotles in adobo sauce chopped
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

  1. In a blender, combine mayonnaise, chipotles in adobo sauce, lemon juice, salt, and pepper. Blend until smooth to create the chipotle sauce.
  2. Brush one side of each slice of sourdough bread with olive oil. Place the bread slices, oiled side down, in a pan over medium heat.
  3. Spread a generous amount of the chipotle sauce on the non-oiled side of each bread slice.
  4. Layer the sandwich fillings on one slice of bread: cilantro, gouda cheese, grilled chicken, avocado, and Papadew peppers.
  5. Place the other slice of bread on top, sauce-side down. Continue to cook the sandwich in the pan for 3-5 minutes per side, or until both sides are golden brown and crispy, and the cheese is melted.

Notes

This sandwich is a great option for a quick lunch or a satisfying dinner. You can adjust the spice level of the chipotle sauce to your preference.
