- In a blender, combine mayonnaise, chipotles in adobo sauce, lemon juice, salt, and pepper. Blend until smooth to create the chipotle sauce.
- Brush one side of each slice of sourdough bread with olive oil. Place the bread slices, oiled side down, in a pan over medium heat.
- Spread a generous amount of the chipotle sauce on the non-oiled side of each bread slice.
- Layer the sandwich fillings on one slice of bread: cilantro, gouda cheese, grilled chicken, avocado, and Papadew peppers.
- Place the other slice of bread on top, sauce-side down. Continue to cook the sandwich in the pan for 3-5 minutes per side, or until both sides are golden brown and crispy, and the cheese is melted.
Notes
This sandwich is a great option for a quick lunch or a satisfying dinner. You can adjust the spice level of the chipotle sauce to your preference.
