Ingredients

For the Wings
  • 2 tablespoons butter melted
  • 1 tablespoon vegetable oil
  • 2 pounds chicken wings cut through the 2 wing joints; discard wing tips
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Dash cayenne pepper
For the Sauce
  • 1/2 cup barbecue sauce divided

Equipment

  • Oven
  • Baking pan
  • Large bowl

Method

  1. Preheat your oven to 425°F (220°C). Line a 15x10x1-inch baking pan with foil or parchment paper. Pour the melted butter and vegetable oil over the lining and brush to coat evenly.
  2. Prepare the chicken wings: Using a sharp knife, cut through the two wing joints to separate the flats and drumettes. Discard the wing tips. In a large bowl, combine the baking powder, salt, onion powder, garlic powder, pepper, and cayenne pepper. Add the wing pieces to the bowl a few at a time and toss to coat them evenly. Shake off any excess seasoning.
  3. Arrange the seasoned wings in a single layer on the prepared baking sheet. Bake for 30-35 minutes, or until the wings are golden brown. Remove from the oven and brush both sides with half of the barbecue sauce.
  4. Return the wings to the oven and cook for an additional 8-10 minutes, or until they are browned and the juices run clear. Brush with the remaining 1/4 cup of barbecue sauce before serving.
