- In a bowl, beat the crème fraîche, sugar, and vanilla sugar with the beaters of a handheld electric mixer for about 5 minutes until creamy.
- Crumble the cookies coarsely.
- Alternately layer the raspberries, crumbled cookies, and crème fraîche mixture into four dessert glasses.
- Chill the layered dessert for at least 3 hours.
- Just before serving, crumble the meringues coarsely and sprinkle them over the top of each dessert.
