- Preheat your oven to 400°F (200°C). Butter and flour four 6-ounce ramekins.
- In a heatproof bowl set over a saucepan of simmering water, melt the butter and chopped bittersweet chocolate, stirring until smooth. Remove from heat.
- In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and slightly thickened.
- Gradually whisk the chocolate mixture into the egg mixture until well combined.
- Gently fold in the flour and salt until just combined. Do not overmix.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on a baking sheet and bake for 10-12 minutes, or until the edges are set but the center is still soft.
- Let the cakes cool in the ramekins for 1 minute, then carefully invert them onto serving plates.
Notes
Serve immediately with powdered sugar, berries, or ice cream.
