Ingredients
  

For the Cookies
  • 1/2 cup butter softened
  • 2/3 cup white sugar
  • 1 egg
  • 1 egg white
  • 1/4 tsp vanilla extract
  • 1 2/3 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt

Method
 

  1. If you have a stand mixer, cream together the softened butter and white sugar until well combined. Add the egg and vanilla extract, and mix until incorporated.
  2. Stir in the all-purpose flour, baking powder, and salt. Mix until a cohesive dough forms.
  3. Cover the dough with plastic wrap. Chill in the refrigerator for at least 1 hour, or preferably overnight.
  4. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line baking sheets with parchment paper.
  5. On a lightly floured surface, roll out the chilled dough to 1/4 inch thickness. Use cookie cutters to create your desired shapes, such as circles for clock faces.
  6. Place the cut-out cookies onto the prepared baking sheets. Bake for 7-8 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Decorate as desired.

Notes

These cookies are a great base for decorating. You can use royal icing to draw clock hands and numbers for a countdown effect. They are also suitable for keto diets if you substitute almond flour and a keto-friendly sweetener.
