Method
 

  1. Preheat your oven to 350° F. Line two baking sheets with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, brown sugar, flour, baking soda, and vanilla. Mix until well combined.
  3. Fold in the chocolate chips, raisins, and nuts if you are using them.
  4. Scoop the dough into large spoonfuls onto the prepared baking sheets. Space them about 2 inches apart, as they will spread slightly.
  5. Bake for 10-12 minutes, until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Either dark or light brown sugar will work in this recipe. Dark brown sugar will provide a deeper flavor.
