- Preheat your oven to 350° F. Line two baking sheets with parchment paper.
- In a mixing bowl, combine the cottage cheese, rolled oats, brown sugar, flour, baking soda, and vanilla. Mix until well combined.
- Fold in the chocolate chips, raisins, and nuts if you are using them.
- Scoop the dough into large spoonfuls onto the prepared baking sheets. Space them about 2 inches apart, as they will spread slightly.
- Bake for 10-12 minutes, until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Either dark or light brown sugar will work in this recipe. Dark brown sugar will provide a deeper flavor.
