Ingredients
  

For the Mousse
  • 1 cup 2% cottage cheese
  • cup milk chocolate chips
  • 1 tbsp cocoa powder
For Serving (Optional)
  • 1 dollop whipped cream
  • 1 shaving chocolate
  • 1 serving favorite fruit

Method
 

  1. Melt the chocolate chips. Place the chocolate chips in a microwave-safe dish. Microwave in 20-30 second intervals, stirring between each, until fully melted.
  2. Blend the mousse ingredients. Add the cottage cheese, melted chocolate, and cocoa powder to a food processor or high-speed blender. Blend on high for 20-30 seconds. Use a spatula to scrape down the sides, then blend again until smooth.
  3. Chill the mousse. Pour the mousse into a dish or divide it into smaller dishes. You can eat it immediately, or chill it in the fridge for 30 minutes for a creamier, thicker texture.
  4. Serve and enjoy. Serve with whipped cream, shaved chocolate, or your favorite fruit.

Notes

This mousse is naturally gluten-free (use gluten-free chocolate chips), nut-free, and vegetarian. For a lactose-free version, use lactose-free cottage cheese and dairy-free chocolate chips. For a sweeter mousse, add 1 teaspoon of maple syrup or honey. A splash of vanilla extract can also enhance the flavor.
