Method
- Place chicken pieces in the slow cooker. Season with salt and pepper.
- In a large pot, melt butter over medium heat. Add carrots, celery, and onion. Cook until softened, about 5-7 minutes.
- Transfer the vegetable mixture to the slow cooker.
- Pour in chicken broth. Cover and cook on low for 4 hours, or until chicken is cooked through.
- Remove chicken from the slow cooker and shred it. Return shredded chicken to the slow cooker.
- Stir in heavy cream and parsley.
- In a bowl, combine Bisquick mix and milk. Stir until just combined.
- Drop spoonfuls of dumpling batter onto the surface of the simmering stew. Cover and simmer for 15-20 minutes, or until dumplings are cooked through.
Notes
You can add other vegetables like peas or corn if you like.
