Cozy Slow Cooker Chicken and Dumplings

This recipe makes comforting chicken and dumplings in your slow cooker.

Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
For the Soup
  • 1 tablespoon butter
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 0.5 cup chopped onion
  • 4 cups chicken broth
  • 0.5 cup heavy cream
  • 2 tablespoons chopped fresh parsley
For the Dumplings
  • 2 cups bisquick mix
  • 0.75 cup milk

Equipment

  • Slow Cooker
  • Large pot
  • Whisk

Method
 

  1. Place chicken pieces in the slow cooker. Season with salt and pepper.
  2. In a large pot, melt butter over medium heat. Add carrots, celery, and onion. Cook until softened, about 5-7 minutes.
  3. Transfer the vegetable mixture to the slow cooker.
  4. Pour in chicken broth. Cover and cook on low for 4 hours, or until chicken is cooked through.
  5. Remove chicken from the slow cooker and shred it. Return shredded chicken to the slow cooker.
  6. Stir in heavy cream and parsley.
  7. In a bowl, combine Bisquick mix and milk. Stir until just combined.
  8. Drop spoonfuls of dumpling batter onto the surface of the simmering stew. Cover and simmer for 15-20 minutes, or until dumplings are cooked through.

Notes

You can add other vegetables like peas or corn if you like.
