Cranberry Brie Bites

Ingredients
  

For the Cranberry Brie Bites
  • 1 round cold brie cheese 8-ounce
  • 1/3 cup whole berry cranberry sauce such as Spiced Cranberry Sauce
  • 2 tablespoons packed light or dark brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated orange zest from 1/2 medium orange
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons coarsely chopped nuts such as pistachios, almonds, walnuts, or pecans
  • 2 sprigs fresh rosemary divided (optional)
For Serving
  • Assorted store-bought or homemade crackers, or crostini

  • Small bowl
  • Small baking dish or pie plate
  • Parchment paper
  • Spatula

Method
 

  1. Heat your oven to 350°F. In a small bowl, combine the cranberry sauce, brown sugar, vanilla extract, orange zest, and nutmeg.
  2. Place the cold brie round in a small baking dish or pie plate if you plan to serve it directly from the dish. If you want to transfer the cheese to a serving dish later, line a baking sheet with parchment paper and place the brie on it.
  3. Spoon the cranberry mixture evenly over the top of the brie. Sprinkle with the chopped nuts. Add one rosemary sprig on top if you are using it.
  4. Bake for 8 to 15 minutes, or until the cheese is soft when gently poked. Avoid overbaking until it is completely melted or collapsed.
  5. If you baked the brie in a dish you plan to transfer, carefully slide the cheese onto a serving dish using a spatula. Remove the baked rosemary sprig and replace it with a fresh one if desired. Serve immediately with crackers or crostini.

Notes

These Cranberry Brie Bites are best served warm. You can prepare the cranberry topping mixture ahead of time and store it in the refrigerator. For a different flavor profile, try adding a pinch of cinnamon or ginger to the cranberry mixture.
