- Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
- Pour in the heavy cream and chicken broth. Bring to a simmer, stirring occasionally. Let it simmer for about 5 minutes, or until the sauce begins to thicken slightly.
- Stir in the grated Parmesan cheese until melted and smooth. Add the chopped spinach and sun-dried tomatoes. Cook for another 2-3 minutes, until the spinach is wilted.
- Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Heat through for 1-2 minutes.
- Serve immediately.
