Creamy Tuscan Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
For the Sauce
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped spinach
  • 1/4 cup sun-dried tomatoes chopped

Method
 

  1. Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  3. Pour in the heavy cream and chicken broth. Bring to a simmer, stirring occasionally. Let it simmer for about 5 minutes, or until the sauce begins to thicken slightly.
  4. Stir in the grated Parmesan cheese until melted and smooth. Add the chopped spinach and sun-dried tomatoes. Cook for another 2-3 minutes, until the spinach is wilted.
  5. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Heat through for 1-2 minutes.
  6. Serve immediately.

Notes

You can serve this creamy Tuscan chicken over pasta, rice, or with a side of crusty bread.
