Crispy Baked Garlic Chicken Thighs

This recipe gives you crispy chicken thighs cooked on the stovetop with a simple garlic butter pan sauce. It is a quick way to make an impressive weeknight dinner.

Ingredients
  

  • 700 g skinless boneless chicken thighs 5 to 6 thighs
  • 1 tsp garlic powder
  • 1 tsp Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup dry white wine or broth or water
  • 25 g unsalted butter or 2 tbsp
  • 2 large garlic cloves minced
  • Finely chopped parsley optional

  • Spatula

Method
 

  1. Sprinkle both sides of chicken with garlic powder, salt, and pepper.
  2. Heat oil in a large skillet over medium heat. Place chicken in skillet smooth side down.
  3. Press down lightly with a spatula. Cook for 5 minutes until deep golden and crispy.
  4. Turn and press lightly with a spatula. Cook for 2 minutes. Add garlic and butter, cook for 1 minute until garlic is light golden and smells fragrant.
  5. Add wine, then turn up the heat. Stir around the chicken to dissolve golden bits stuck on the skillet into the wine. Simmer rapidly for 1 1/2 minutes or until the alcohol smell evaporates.
  6. Remove from heat. Serve chicken with the sauce and optional parsley.

Notes

If you use chicken breast instead of thighs, cut the breast in half horizontally so they are 1cm thick. Heat the skillet on high, cook for 2 minutes, flip, cook for 1 minute, then add garlic and butter. Proceed with the rest of the recipe as written.
