Ingredients
  

Salad
  • 2 cups Cucumber chopped
  • 2 cups Tomatoes chopped
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Red onion thinly sliced
  • 1/4 cup Fresh mint chopped
Dressing
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

  1. In a large bowl, combine the chopped cucumber, tomatoes, crumbled feta cheese, sliced red onion, and chopped mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for later.

Notes

This salad can be made ahead of time. Store the dressing separately and toss just before serving to keep the vegetables crisp.
