For the Toast
  • 2 slices whole grain bread or English muffin or bagel
For the Topping
  • 1/2 avocado sliced
  • 1/4-1/2 lemon juiced
  • 2/3 cup cottage cheese
  • to taste hot honey
  • to taste red pepper flakes
  • to taste salt
  • to taste black pepper
Optional Toppings
  • 1 everything bagel seasoning optional
  • 1 finely chopped herbs optional
  • 1 chili crunch optional
  • 1 sliced tomato optional
  • 1 fried egg optional

Method
 

  1. Toast your bread until it is golden brown. You can use a toaster or a toaster oven.
  2. On each slice of toast, arrange the sliced avocado. Squeeze fresh lemon juice over the avocado. Add ⅓ cup of cottage cheese to each slice. Season with salt and black pepper to your preference. Drizzle hot honey over the top and add red pepper flakes if you like a little heat.
