Easy Beef Taco Casserole

This casserole combines seasoned ground beef, tomato soup, picante sauce, and tortillas for a quick, satisfying dinner. It is a simple dish suitable for busy weeknights.

Ingredients
  

  • 1 pound extra lean ground beef (90%)
  • 10.75 ounces Campbell’s Condensed Tomato Soup
  • 1 cup Pace Picante Sauce
  • 1/2 cup water
  • 2 teaspoons chili powder
  • 8 corn tortillas (6-inch) or 6 flour tortillas (8-inch) tortillas, cut into 1-inch pieces
  • 1 cup shredded Cheddar cheese or Monterey Jack cheese amount divided

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
  2. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  3. Stir the tomato soup, picante sauce, water, and chili powder into the ground beef. Cook until heated through.
  4. Fold the cut tortilla pieces into the beef mixture.
  5. Spread half of the beef and tortilla mixture into the prepared baking dish. Sprinkle with half of the shredded cheese.
  6. Top with the remaining beef mixture, then sprinkle with the remaining cheese.
  7. Bake for 25 minutes, or until the cheese is melted and bubbly.

Notes

You can substitute the ground beef with ground turkey or chicken for a different flavor profile. For a lower-carb option, reduce the number of tortillas or substitute them with cauliflower rice.
