- In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the diced tomatoes (undrained), rinsed kidney beans, taco seasoning, and water to the skillet. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
- Uncover and stir in the shredded cheddar cheese until melted.
- Serve hot, with your favorite toppings.
Notes
This taco skillet is versatile. Feel free to add other vegetables like bell peppers or corn. You can also substitute the kidney beans with black beans.
