Freezer Sausage Breakfast Burritos

Make a batch of these sausage breakfast burritos and freeze them for quick breakfasts.

Ingredients
  

For the Burritos
  • 1 lb Pork sausage bulk
  • 8 Large flour tortillas 10-inch
  • 1 cup Shredded cheddar cheese
  • 8 Large eggs
  • 1/4 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Equipment

  • Large skillet
  • Baking sheet
  • Spatula
  • Large bowl

Method
 

  1. Cook sausage in a large skillet over medium-high heat until browned. Drain excess grease.
  2. While sausage cooks, whisk eggs, milk, salt, and pepper in a large bowl.
  3. Pour egg mixture into the skillet with the sausage. Cook, stirring, until eggs are set.
  4. Warm tortillas slightly to make them pliable. You can do this in a dry skillet or microwave.
  5. Spoon about 1/4 of the sausage and egg mixture onto the center of each tortilla. Top with cheese.
  6. Fold in the sides of the tortillas, then roll up tightly from the bottom to create burritos.
  7. Wrap each burrito tightly in plastic wrap, then in aluminum foil. Place on a baking sheet and freeze for at least 2 hours, or until firm.
  8. To reheat, remove foil and plastic wrap. Wrap in a paper towel and microwave on high for 2-3 minutes, or until heated through. You can also reheat in a 350°F (175°C) oven for about 20-30 minutes.

Notes

These burritos can be stored in the freezer for up to 3 months.
