Method
- Cook sausage in a large skillet over medium-high heat until browned. Drain excess grease.
- While sausage cooks, whisk eggs, milk, salt, and pepper in a large bowl.
- Pour egg mixture into the skillet with the sausage. Cook, stirring, until eggs are set.
- Warm tortillas slightly to make them pliable. You can do this in a dry skillet or microwave.
- Spoon about 1/4 of the sausage and egg mixture onto the center of each tortilla. Top with cheese.
- Fold in the sides of the tortillas, then roll up tightly from the bottom to create burritos.
- Wrap each burrito tightly in plastic wrap, then in aluminum foil. Place on a baking sheet and freeze for at least 2 hours, or until firm.
- To reheat, remove foil and plastic wrap. Wrap in a paper towel and microwave on high for 2-3 minutes, or until heated through. You can also reheat in a 350°F (175°C) oven for about 20-30 minutes.
Notes
These burritos can be stored in the freezer for up to 3 months.
