Fresh Peach Salsa with Cinnamon Chips

Ingredients
  

For the Cinnamon Chips
  • 6 ounces Wonton wrappers cut into triangles
  • 2 tablespoons Butter melted
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Cinnamon
For the Peach Salsa
  • 2 cups Fresh peaches peeled, pitted, and diced
  • 1/4 cup Red onion finely chopped
  • 1/4 cup Fresh cilantro chopped
  • 1 tablespoon Lime juice fresh
  • 1/4 teaspoon Salt

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the granulated sugar and cinnamon.
  3. Arrange the wonton wrapper triangles in a single layer on the prepared baking sheet. Brush the tops with melted butter.
  4. Sprinkle the cinnamon-sugar mixture evenly over the buttered wonton wrappers.
  5. Bake for 8-10 minutes, or until golden brown and crisp. Let them cool completely.
  6. While the chips are baking, prepare the salsa. In a medium bowl, combine the diced peaches, chopped red onion, chopped cilantro, fresh lime juice, minced jalapeno (if using), and salt.
  7. Gently stir to combine all ingredients. Taste and adjust seasoning if needed.
  8. Serve the fresh peach salsa with the cooled cinnamon chips.

Notes

You can substitute other fruits like mango or pineapple for the peaches. For a spicier salsa, leave some seeds in the jalapeno.
