  • 1 tablespoon mayonnaise
  • 3 cloves garlic, very finely minced
  • 1 tablespoon Italian parsley, finely chopped
  • 1 pinch salt and pepper to taste
For the Sandwich
  • 4 slices sandwich bread sourdough recommended
  • 1 cup shredded cheese Gruyere, Colby Jack, and smoked Cheddar blend recommended

Method
 

  1. In a bowl, mix the softened butter, mayonnaise, minced garlic, and chopped parsley until well combined. Season with salt and pepper to your preference.
  2. Spread the garlic butter mixture evenly on one side of each slice of bread. Place the shredded cheese on two of the bread slices, then top with the remaining bread slices, buttered side up.
  3. Heat a non-stick skillet over medium-low heat. Cooking on medium-low heat is important to ensure the cheese melts completely before the bread burns.
  4. Place the sandwiches in the warm skillet. Cook for about 5 minutes per side, until the bread is golden brown and the cheese is fully melted. You may need to flip the sandwiches a few times and gently press them down to help the cheese melt evenly.
  5. Slice the grilled cheese sandwiches and serve immediately while warm and melty.
