Ingredients
  

For the Chicken and Potatoes
  • 1.5 lbs chicken breast cut into 1-inch pieces
  • 1.5 lbs potatoes cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 packet ranch seasoning mix
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the chicken pieces and potato cubes.
  3. Add the olive oil, ranch seasoning mix, garlic powder, black pepper, and salt to the bowl. Toss everything together until the chicken and potatoes are evenly coated.
  4. Spread the coated chicken and potatoes in a single layer on the prepared baking sheet.
  5. Bake for 30 minutes, or until the chicken is cooked through and the potatoes are tender and lightly browned, flipping halfway through.
  6. Serve hot.

Notes

For extra flavor, you can add chopped fresh parsley as a garnish before serving.
