Greek Yogurt Marinated Chicken Thighs

This recipe uses plain Greek yogurt to tenderize chicken thighs while adding a rich flavor profile. The yogurt marinade helps create moist chicken suitable for healthy eating and meal preparation.

Ingredients
  

Marinade
  • 3/4 cup Plain Greek yogurt
  • 1/4 cup Olive oil
  • 3 Tablespoon Apple cider vinegar
  • 1 lemon Juiced
  • 2 Small shallots
  • 10 Cloves garlic Use 10 to 12 cloves
  • 1 Tablespoon Smoked paprika
  • 1 Tablespoon Dried oregano
  • 1 Tablespoon Cumin
  • 1 teaspoon Turmeric
  • 1/2 teaspoon Dill weed
  • 1/2 teaspoon Cayenne pepper
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
Chicken
  • 2 1/2 pounds Boneless skinless chicken thighs

Equipment

  • Food processor
  • Zip top bag
  • Baking sheet

Method
 

  1. Add all of the marinade ingredients into the bowl of a large food processor.
  2. Pulse the ingredients until the mixture is smooth.
  3. Place the chicken thighs into a zip top bag. Pour the marinade over the chicken.
  4. Tightly seal the bag and massage the chicken so it is fully coated in the marinade. Marinate for 2 to 12 hours.
  5. Preheat the oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper.
  6. Place the chicken thighs in a single layer on the prepared baking sheet so they do not overlap. Shake off any excess marinade.
  7. Bake for 25 to 30 minutes. Broil on high for 2 to 3 minutes or until the edges are slightly blackened.

Notes

The acidity of the yogurt helps tenderize the meat while adding flavor. This method works well for meal preparation.
