Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts Chicken breasts
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the Salad
  • 6 cups Romaine lettuce chopped
  • 2 Hard-boiled eggs chopped
  • 4 strips Bacon cooked and crumbled
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Avocado diced
  • 1/4 cup Blue cheese crumbled
For the Dressing
  • 1/4 cup Mayonnaise
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove Garlic minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Water or more, to thin
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes before slicing.
  4. While chicken is grilling, prepare the dressing. In a small bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, minced garlic, olive oil, water, salt, and pepper until smooth.
  5. Assemble the bowls. Divide chopped romaine lettuce among four bowls.
  6. Top the lettuce with sliced grilled chicken, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, diced avocado, and crumbled blue cheese.
  7. Drizzle with the prepared dressing.
  8. Chill for 10 minutes before serving, if desired.

Notes

You can substitute turkey bacon for regular bacon. For a lighter dressing, use Greek yogurt instead of mayonnaise.
