Ingredients
  

For the Salad
  • 4 ripe peaches halved and pitted
  • 5 oz mixed greens
  • 1/4 cup pecans toasted
  • 1/4 cup feta cheese crumbled
For the Honey Dressing
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Equipment

  • Grill
  • Small bowl
  • Whisk
  • Large bowl

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with olive oil. Grill for 3-4 minutes per side, until grill marks appear and peaches are slightly softened.
  3. Remove peaches from grill and let cool slightly. Cut into slices.
  4. In a small bowl, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper for the dressing.
  5. In a large bowl, combine mixed greens, grilled peach slices, toasted pecans, and crumbled feta cheese.
  6. Drizzle the honey dressing over the salad and toss gently to combine.
  7. Chill for 5 minutes before serving, if desired.

Notes

You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta.
