Method
- Preheat your grill to medium-high heat.
- Lightly brush the cut sides of the peaches with olive oil. Grill for 3-4 minutes per side, until grill marks appear and peaches are slightly softened.
- Remove peaches from grill and let cool slightly. Cut into slices.
- In a small bowl, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper for the dressing.
- In a large bowl, combine mixed greens, grilled peach slices, toasted pecans, and crumbled feta cheese.
- Drizzle the honey dressing over the salad and toss gently to combine.
- Chill for 5 minutes before serving, if desired.
Notes
You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta.
