- Preheat your grill to medium-high heat.
- Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
- Brush the skewers lightly with olive oil.
- Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
- Remove from grill, sprinkle with chopped fresh mint, and drizzle with balsamic glaze if desired.
