Grilled Watermelon Skewers with Halloumi Cheese

Ingredients
  

For the Skewers
  • 1/2 medium Watermelon seedless, cut into 1-inch cubes
  • 8 oz Halloumi cheese cut into 1-inch cubes
  • 2 tbsp Olive oil
  • 1 tbsp Fresh mint leaves chopped
  • 1 tsp Balsamic glaze optional

Equipment

  • Grill
  • Skewers
  • Knife
  • Cutting board

Method
 

  1. Preheat your grill to medium-high heat.
  2. Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
  3. Brush the skewers lightly with olive oil.
  4. Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
  5. Remove from grill, sprinkle with chopped fresh mint, and drizzle with balsamic glaze if desired.

Notes

Serve immediately while warm.
