  • 1 3/4 cups white whole wheat flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/3 cup mashed ripe bananas about 3 large bananas
  • 2 eggs whisked + room temperature
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 tsp. vanilla extract
  • 3/4 cup chocolate chips with more for topping

Method
 

  1. Preheat oven to 350F and prepare a 9x5 loaf pan.
  2. In a small bowl, mix together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk mashed bananas and eggs until combined.
  4. Mix in oil, maple syrup, and vanilla.
  5. Add dry ingredients to wet ingredients and stir to combine.
  6. Add in any mix-ins like chocolate chips or nuts.
  7. Pour batter into the prepared loaf pan.
  8. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
