- In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until the mixture is smooth.
- Fold in half of the chocolate chips (3/4 cup) into the dough mixture.
- Line a baking sheet with parchment paper. Spread the cookie dough mixture evenly onto the parchment paper to form the bark. You can use your hands to help shape it.
- Place the baking sheet in the freezer for 5 to 10 minutes to let the bark chill.
- While the bark is chilling, melt the remaining 3/4 cup of chocolate chips in the microwave.
- Remove the bark from the freezer and pour the melted chocolate evenly over the top. Return the baking sheet to the freezer for at least 1 hour, or until the chocolate is firm.
- Once firm, remove the bark from the freezer, cut it into pieces, and enjoy.
Notes
Store any leftover Healthy Cookie Dough Bark in the freezer for up to 2 months. Letting it thaw for a few minutes before eating can improve the texture.
