Ingredients
  

For the Bark
  • 1 1/2 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 3/4 cup chocolate chips divided
For the Topping
  • 3/4 cup chocolate chips

  • Large bowl
  • Baking sheet
  • Parchment paper
  • Microwave

Method
 

  1. In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until the mixture is smooth.
  2. Fold in half of the chocolate chips (3/4 cup) into the dough mixture.
  3. Line a baking sheet with parchment paper. Spread the cookie dough mixture evenly onto the parchment paper to form the bark. You can use your hands to help shape it.
  4. Place the baking sheet in the freezer for 5 to 10 minutes to let the bark chill.
  5. While the bark is chilling, melt the remaining 3/4 cup of chocolate chips in the microwave.
  6. Remove the bark from the freezer and pour the melted chocolate evenly over the top. Return the baking sheet to the freezer for at least 1 hour, or until the chocolate is firm.
  7. Once firm, remove the bark from the freezer, cut it into pieces, and enjoy.

Notes

Store any leftover Healthy Cookie Dough Bark in the freezer for up to 2 months. Letting it thaw for a few minutes before eating can improve the texture.
