- Preheat your oven to 350°F (175°C). Grease and flour a 10-inch fluted or plain tube pan.
- In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy, about 5 to 7 minutes. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice and vanilla extract.
- Gradually add the all-purpose flour alternately with the 7UP soda, beating well after each addition until just combined. Do not overmix.
- Transfer the batter to your prepared pan and spread it evenly. Bake until a toothpick inserted into the center comes out clean, which should take 65 to 75 minutes. Let the cake cool in the pan for 20 minutes before inverting it onto a wire rack to cool completely.
- To make the glaze, combine the confectioners' sugar, lemon juice, and enough 7UP soda in a small bowl to reach your desired drizzling consistency. If you like, stir in the lemon or lime zest. Drizzle the glaze over the cooled cake.
