For the Cake
  • 1-1/2 cups butter softened
  • 3 cups sugar
  • 5 large eggs room temperature
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 3/4 cup 7UP soda
For the Glaze
  • 1-1/2 cups confectioners' sugar
  • 1 tablespoon lemon or lime juice
  • 1 to 2 tablespoons 7UP soda to reach desired consistency
  • 1/2 teaspoon lemon or lime zest optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch fluted or plain tube pan.
  2. In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy, about 5 to 7 minutes. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice and vanilla extract.
  3. Gradually add the all-purpose flour alternately with the 7UP soda, beating well after each addition until just combined. Do not overmix.
  4. Transfer the batter to your prepared pan and spread it evenly. Bake until a toothpick inserted into the center comes out clean, which should take 65 to 75 minutes. Let the cake cool in the pan for 20 minutes before inverting it onto a wire rack to cool completely.
  5. To make the glaze, combine the confectioners' sugar, lemon juice, and enough 7UP soda in a small bowl to reach your desired drizzling consistency. If you like, stir in the lemon or lime zest. Drizzle the glaze over the cooled cake.
