Lemon Chicken Orzo Soup With Fresh Herbs

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and bring to a boil. Add the orzo pasta and return the chicken to the pot.
  5. Reduce heat and simmer for 10-12 minutes, or until the orzo is cooked through and the chicken is cooked through.
  6. Stir in fresh lemon juice, chopped parsley, and chopped dill. Season with salt and pepper to taste.
  7. Serve hot.
