- In a large bowl, whisk together the olive oil, lemon juice, salt, pepper, oregano, paprika, and garlic powder.
- Add the shrimp to the bowl and toss gently to coat evenly with the marinade. Let marinate for at least 15 minutes, or up to 2 hours.
- Thread 4-6 shrimp onto each soaked skewer. Place skewers on a plate while you finish skewering the remaining shrimp.
- Heat a grill or grill pan over medium-high heat. Cook the shrimp for 2-3 minutes per side, until pink and opaque.
- Serve warm with fresh parsley and lemon slices, if desired.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a skillet with a little olive oil. You can marinate the shrimp for up to 2 hours, as the lemon's acid can start to cook the shrimp. The marinade can be mixed up to 5 days in advance.
