Ingredients

Shrimp
  • 1 pound large shrimp peeled and deveined
Marinade
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon oregano
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
For Serving
  • Chopped parsley for serving

Method

  1. In a large bowl, whisk together the olive oil, lemon juice, salt, pepper, oregano, paprika, and garlic powder.
  2. Add the shrimp to the bowl and toss gently to coat evenly with the marinade. Let marinate for at least 15 minutes, or up to 2 hours.
  3. Thread 4-6 shrimp onto each soaked skewer. Place skewers on a plate while you finish skewering the remaining shrimp.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a skillet with a little olive oil. You can marinate the shrimp for up to 2 hours, as the lemon's acid can start to cook the shrimp. The marinade can be mixed up to 5 days in advance.
