Mediterranean Pasta Salad Jars

Ingredients
  

For the Salad
  • 8 ounces Rotini pasta or other short pasta
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh parsley chopped
For the Dressing
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder
  • Salt to taste
  • Black pepper to taste

Equipment

  • Large pot
  • Colander
  • Large bowl
  • Mason jars

Method
 

  1. Cook the pasta according to package directions. Drain and rinse with cold water. Set aside.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
  3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper for the dressing.
  4. Pour the dressing over the pasta mixture and toss to combine. Taste and adjust seasoning if needed.
  5. To assemble the jars, layer the ingredients as follows: dressing at the bottom, followed by pasta salad, and any extra toppings on top.
  6. Seal the jars tightly and refrigerate until ready to serve. Shake well before eating.

Notes

You can add grilled chicken or chickpeas for extra protein. Other vegetables like bell peppers or artichoke hearts also work well.
