For the Topping
  • 1 cup sour cream
  • 3/4 cup Parmesan cheese, finely grated
  • 1/4 cup mayonnaise
  • 1 tsp. garlic powder
  • 1 tsp. sweet paprika
  • 1/4 tsp. onion powder
  • 1/8 tsp. cayenne pepper
  • 1/4 tsp. Kosher salt
  • 1/4 tsp. black pepper, freshly ground
For the Chicken
  • 6 skinless, boneless chicken breasts about 2 3/4 lb. total
  • 1 1/2 teaspoons Kosher salt for seasoning chicken
  • black pepper, freshly ground optional, for seasoning chicken
  • cooking spray
  • Chopped fresh parsley leaves for serving

Method
 

  1. Preheat your oven to 375ºF (190ºC).
  2. In a medium bowl, combine the sour cream, grated Parmesan, mayonnaise, garlic powder, paprika, onion powder, cayenne pepper, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Mix well.
  3. Grease a 13"-by-9" baking dish with cooking spray. Season the chicken breasts all over with 1 1/2 teaspoons salt and pepper, if using. Arrange the chicken in a single layer in the prepared baking dish. Spread the sour cream mixture evenly over the top of each chicken breast.
  4. Bake for 30 to 35 minutes, or until the topping is golden brown and an instant-read thermometer inserted into the thickest part of the chicken registers 165ºF (74ºC). Garnish with fresh parsley before serving.
