Ingredients
  

  • 2/3 cup Mayonnaise
  • 1/2 cup Finely grated Parmesan cheese (about 2 ounces)
  • 1 teaspoon Garlic powder
Chicken
  • 2 large Boneless, skinless chicken breasts (about 1 1/2 pounds total)
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper freshly ground
Garnish
  • Fresh parsley leaves chopped, optional

  • 9x13-inch broiler-safe baking dish
  • Instant-read thermometer

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the mayonnaise, grated Parmesan cheese, and garlic powder. Stir until well mixed.
  3. Cut each chicken breast in half horizontally to create four thinner pieces. Pat the chicken dry with paper towels. Season both sides of the chicken pieces with kosher salt and black pepper.
  4. Arrange the seasoned chicken in a single layer in a 9x13-inch broiler-safe baking dish. Spread the mayonnaise mixture evenly over the top of each chicken piece.
  5. Bake for 20 to 25 minutes, or until the chicken is cooked through and an instant-read thermometer registers at least 165°F (74°C).
  6. Switch the oven setting to broil. Broil for 2 to 3 minutes, watching closely, until the topping is golden brown.
  7. Garnish with fresh chopped parsley, if desired, before serving.
