Method
- Set your oven to 375 degrees Fahrenheit.
- In a mixing bowl, combine the mayonnaise, Parmesan cheese, seasoning, and onion powder.
- Place the chicken in a baking dish so the pieces do not overlap. Coat the chicken breasts evenly with the mayonnaise mixture.
- Bake for about 45 minutes until the chicken is cooked through and the topping is golden brown. Check the internal temperature with a thermometer; it should read 165 degrees Fahrenheit.
- Remove the dish from the oven. Sprinkle with fresh parsley if you are using it, and then serve.

Notes
For a spicier dish, add a pinch of cayenne pepper or red pepper flakes to the mayonnaise mixture. You can mix in dried herbs like thyme or rosemary for more flavor. For a lighter coating, swap the full-fat mayonnaise for a low-fat version or use Greek yogurt. Store any leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat leftovers in the microwave, or warm them in the oven at 350°F for the best texture.
