Ingredients

For the Crust
  • 24 cookies Oreo cookies finely crushed
  • 6 tablespoons butter melted
For the Filling
  • 24 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped to stiff peaks
  • 10 cookies Oreo cookies chopped

Equipment

  • 9-inch springform pan
  • Food processor
  • Electric mixer
  • Mixing Bowls

Method

  1. Combine the crushed Oreo cookies and melted butter in a bowl. Press the mixture evenly into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, beating until well combined.
  3. Gently fold the whipped heavy cream into the cream cheese mixture until just combined. Stir in the chopped Oreo cookies.
  4. Spread the filling evenly over the crust. Cover the cheesecake and refrigerate for at least 2 hours, or until firm.
  5. Before serving, you can garnish with additional crushed or whole Oreo cookies if desired.

Notes

For a richer flavor, you can add a tablespoon of cocoa powder to the cream cheese mixture. If you don't have a springform pan, you can use a regular pie plate, but chilling and slicing may be more difficult.
