- In a large pot or Dutch oven, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is softened. Drain off any excess grease.
- Add the minced garlic and taco seasoning to the pot and stir for about 1 minute until fragrant.
- Pour in the diced tomatoes (with their juice) and beef broth. Bring the mixture to a boil.
- Add the pasta to the boiling liquid. Stir to combine, then reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is cooked al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
- Remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
- Serve hot.
