One Pot Taco Pasta

This one-pot taco pasta is a quick and easy dinner option. It combines pasta, ground beef, and taco seasonings for a flavorful meal with minimal cleanup.

Ingredients
  

For the Pasta
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning 1 ounce
  • 1 can diced tomatoes 14.5 ounces, undrained
  • 4 cups beef broth
  • 12 ounces pasta such as rotini or penne
  • 1 cup shredded cheddar cheese

Method
 

  1. In a large pot or Dutch oven, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is softened. Drain off any excess grease.
  2. Add the minced garlic and taco seasoning to the pot and stir for about 1 minute until fragrant.
  3. Pour in the diced tomatoes (with their juice) and beef broth. Bring the mixture to a boil.
  4. Add the pasta to the boiling liquid. Stir to combine, then reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is cooked al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  5. Remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
  6. Serve hot.

Notes

You can customize this dish with your favorite taco toppings, such as sour cream, salsa, or chopped cilantro.
