Oreo Cookies and Cream Icebox Cake

This is a simple, no-bake dessert inspired by layering techniques learned in Italy. It captures the creamy, chocolatey essence of Oreos and is easy to make for a nostalgic treat.

Ingredients
  

For the Whipped Cream
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 tablespoon vanilla extract Use pure vanilla extract for best flavor.
For Assembly
  • 30 whole Oreos Whole cookies for layering.
  • 12 crushed/chopped Oreos For topping.

  • Large mixing bowl
  • Hand mixer or stand mixer with whisk attachment
  • 8x8 baking dish or pan
  • Spatula

Method
 

  1. Add the heavy whipping cream, powdered sugar, and vanilla extract to a large mixing bowl. Use a hand mixer or a stand mixer with the whisk attachment.
  2. Start mixing on low speed, then increase the speed as the mixture thickens. Beat until stiff peaks form, which takes about 7 to 8 minutes.
  3. In an 8x8 baking dish or pan, place a single layer of whole Oreos on the bottom. You might need to cut a few cookies to fill the gaps.
  4. Spread half of the whipped cream mixture over the layer of cookies and smooth the top using a spatula.
  5. Add another layer of Oreo cookies on top of the cream.
  6. Spread the remaining whipped cream over the second layer of cookies and smooth the top surface.
  7. Cover the pan with a lid or plastic wrap. Refrigerate for a minimum of 8 hours, or preferably overnight.
  8. Top the icebox cake with the crushed Oreos just before you plan to serve it.

Notes

For the best taste and texture, do not substitute the homemade whipped cream with Cool Whip, as it does not stabilize as well in the refrigerator. If you want extra cookies on top for garnish, buy a family-size package of Oreos. You can drizzle chocolate syrup or sauce over each slice if desired before serving.
