Method
- In a jar or container, combine rolled oats, milk, Greek yogurt, maple syrup, cinnamon, and nutmeg. Stir well to combine.
- In a separate small bowl, mix the diced peaches with lemon juice and brown sugar.
- Pour the peach mixture over the oat mixture in the jar. Stir gently.
- Seal the jar and refrigerate for at least 8 hours, or overnight.
- In the morning, stir the oats. If the mixture is too thick, add a splash more milk. Top with granola and chopped pecans, if desired.
Notes
You can adjust the sweetness to your preference. If using frozen peaches, you may not need to thaw them completely before mixing.
