Peach Crumble Bars With Buttery Oat Topping

Ingredients
  

For the Crust and Topping
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup granulated sugar
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter, melted
For the Peach Filling
  • 4 cups fresh or frozen peaches, sliced thawed if frozen
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 0.5 teaspoon ground cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the flour, rolled oats, 1 cup granulated sugar, baking soda, and salt for the crust and topping. Pour in the melted butter and mix until well combined and crumbly.
  3. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the sliced peaches with 0.5 cup granulated sugar, cornstarch, lemon juice, and cinnamon until the peaches are evenly coated.
  5. Spread the peach filling evenly over the crust in the baking pan.
  6. Sprinkle the remaining crumble mixture evenly over the peach filling.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let the bars cool completely in the pan before cutting into 12 bars.

Notes

You can add a pinch of nutmeg to the peach filling for extra flavor. Serve warm or at room temperature.
