Pesto Orzo

Ingredients
  

For the Orzo
  • 1 cup orzo pasta
  • 2 cups water
  • 1/2 teaspoon salt
For the Pesto
  • 1 cup fresh basil leaves packed
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Cook the orzo: In a medium saucepan, combine the orzo, water, and salt. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until the orzo is tender and the water is absorbed. Drain any excess water.
  2. Make the pesto: While the orzo cooks, combine basil, pine nuts, garlic, Parmesan cheese, salt, and pepper in a food processor. Pulse until finely chopped.
  3. Add the olive oil to the food processor and process until the pesto is smooth.
  4. Combine: Add the pesto to the cooked orzo and stir to combine. Serve immediately.

Notes

You can add cherry tomatoes or grilled chicken for a more complete meal.
